As the Association expands and improves their methods, they continue to seek out ways to further enhance their operation. In 2020, they began to develop their own processing system which includes the “beneficiado humedo” (wet milling) of their coffee. In summary, this is a process that removes the outer fruity flesh of the cherry from the actual bean using a combination of de-pulping machinery and fermentation of the bean in water tanks. Although there are various methods of processing coffee, the process of ‘wet milling’ is among the most preferred methods with coffee farmers.
